One of my favorite things in the whole world is the pancake. No joke. Right up there with puppies. I am also very particular about my pancakes. I don’t dig those “light and airy” things that feel like you aren’t eating anything. No. I like to be very aware that I am consuming pancakes. They should be dense, cake-like, and embarrassingly underdone. Seared, not medium rare. Pancakes are one of the only foods that make me sometimes miss wheat flour – that is until I threw a bunch of things in the food processor and came out with these little gems! They fit all of my pancake prerogatives: they are weighty, but not too eggy (I find Paleo pancakes can get way too soufflé-esque. No thank you.) I cooked mine to maintain the crucial properties of the batter (aka, they were still sort of in batter form with a cooked outer shell.) They taste awesome. And they taste even better with a fried egg and real maple syrup on top of the whole experience. Done and Done. Continue reading
