Lemon Thyme Shortbread Cookies

cookies2Not being able to work out has made me realize something: I need a hobby! Like crazy bad need a hobby. Or more specifically I need a hobby that isn’t intimately connected to exercise. Long walks on the beach – no. Hiking – no. Lifting heavy things – no. Granted, I’m not sure that last one is a hobby (although it totally should be right up there with knitting,) and the first one is totally allowed, but I am freaking beachless here people. Damn you CO! So, a serious amount of whining, at least one major breakdown, and a good deal of couch sitting has brought me back to one of my favorite things ever: baking! It’s been forever since I posted a recipe, and apparently all I needed to trigger some culinary creativity was surgery and 6 weeks of not lifting heavy things off of the ground. Who’d a thought? Apple Cinnamon “Muffies” and Grumpy Baking

A little insight into my life: this week I have subsisted mostly on angry-girl country music. Why have I not discovered this genre before? It has the perfect balance of: I am going to destroy you with my bitingly twangy words – or snappy little fists for that matter; I don’t need you anyways you giant waste of space; and there is an underlying hope that your dashing, (rustic not ralph) button-up wearing gent will find you in the end. Fried Maple Bananas

Don’t blame the bananas for my bad photo skills. They’re awesome. I swear.

This weekend my apartment was a glorious medley of smells. Colorado, ever out to keep us on our weather toes, was freakishly cold, thus totally validating my quest to hole myself up in my apartment, finish my book, and cook – also to wear sweatshirts – so miss these in the summer. A wondrously unexpected result from this weekend of cooking: all of my clothes smell slightly of maple and bacon. Heaven. Anyways, the first part of this cooking/baking experience to be released are these little gems. I freaking hate bananas (unless they are baked in bread form,) and even I love these. I even ventured to try an actual, pristine, un-fried piece of banana since their fried counterparts were so delicious: I’m not wooed quite yet banana – even though you are great for recovery and are so handily wrapped and portable, unless fried you’re still sort of gross. Roasted Butternut Squash Mash

So this recipe is freaking awesome. I totally don’t mean to toot my own horn here, but I was rather ambivalent when constructing it, and thus my mind was blown when I actually tasted it. Granted, I realize that I could be setting myself up for failure here, as you now have extremely high expectations, and when juxtaposed to my low expectations, who knows where your reaction will end up landing. It doesn’t matter though, because this recipe is yummy no matter your expectations, AND it’s the perfect intro to fall dish, AND it’s super easy, AND it can be sweet or savory.
